SWEET POTATO & WHITE BEAN MASH BABY FOOD RECIPE

Two of my friends, Alex and Jamel Powell, are amazing cooks and they happen to be married 😉  They have a beautiful 10 month old daughter named Aria. Aria is at the solid food stage now and boy did she love her first taste of real food!  They whip her up awesome homemade baby food that is both healthy and delicious. I asked Alex if she could share with us one of her delicious homemade and healthy baby food recipes. I hope you and your baby enjoy what Alex has provided us with!

SWEET POTATO & WHITE BEAN MASH w/cinnamon &Thyme

Total time to make is approximately 20 minutes.

Introducing your baby to herbs and spices early can help expose them to different flavor combinations, and also reduce having a picky eater on your hands later. In addition to adding more complexity and flavor to your little ones meal, many herbs and spices are packed with health benefits such as antioxidants, minerals and vitamins. Not only will this meal be rich in vitamins and antioxidants, it also will provide a dose of protein and fiber!

INGREDIENTS:

2 large organic sweet potatoes

1 can drained and washed organic white beans (buying fresh white beans is best)

1 cinnamon stick

1/2-teaspoon thyme

INSTRUCTIONS:

Wash, Peel and cut sweet potatoes into quarters or cubes

Place the white beans, cinnamon stick and thyme in a small pot and then cover with water

Bring beans to a boil and then turn the heat down to low for 3-5 minutes (If using fresh white beans you will boil and simmer a lot longer)

Place peeled sweet potatoes in a steamer (place water in pan on stove top, place steamer into pan, turn heat to high and let them potatoes steam for about 10 minutes or until nice and soft) *Steaming is great in helping to retain the vitamins and minerals! If you don’t have a veggie steamer you can also roast or boil potatoes

Remove the cinnamon stick from the beans, but don’t toss it because we will reuse later

Drain the beans with a pot underneath to re-use the water later

Place sweet potatoes and white beans into baby bullet or blender, then grate some more of the cinnamon stick on top of them.

Add the water you placed aside into the blender, add just enough so you blend into a smooth consistency.

Pour enough for the little’s one meal and enjoy

***This will make enough to freeze for later.

 

***Good tip the baby bullet comes with the freezer container, however when I am baby food prepping I like to make sure my time is well spent, so I try to prep as much as possible for the week! Bed, Bath & Beyond has larger ice cube trays that work perfect, and you get larger portion sizes as your little one grows and requires more during each meal!
